Sargol literally translates as ” Top of the flower “.
Our Iranian Sargol Saffron is made up of the red stigmas which have been professionally cut and separated from the style prior to drying , the threads or stigma of the flower is the actual source of saffron. 105-115 kg of saffron flowers produces 1kg of Sargol saffron .
Stigmas cut this way don’t trap the moisture inside. If the Stigmas stay attached to the style , it keeps
inside up to 30-50 % dead weight and you pay for it.
We only sell the Stigmas ( threads ).
Coloring power is the only measuring tool that assures you of consistent saffron quality . Based on ISO grading standard , our saffron way passes the requirement of 190 grade I. Our saffron coloring strength is 246.6.
Technically, saffron grading is governed by ISO 3632 which prescribes 4 grades based on several elements but significantly upon the measurement of spectroscopic absorbance of chemicals across the 3 dimensions of color (crocine), aroma (safranal), and flavor (picocrocine).
Coloring power is the lead indicator as the other chemicals tend to occur in proportion to color, and is measured on a scale as follows :
- Grade I : > 190
- Grade II : >150
- Grade III : >110
- Grade IV : less than 110
